This particular Cava is a blend of Macabeo (75%) and Parralleda, and fermentation takes place via ‘Methode Champenoise’ before being aged in bottle for 16 months prior to release. Dry with a vivacious mousse, this makes for a perfect aperitif. The persistent mouse carries with it aromatic notes of apricot, apple and pear. The palate is light and fresh with a cleansing acidity leading to a lingering finish.
